Cardamom has a strong, sweet, pungent flavor and aroma, with hints of lemon and mint. Black cardamom has a smoky note and a cooling menthol one as well as cardamom has a complex aroma with a piney, fruity, and almost menthol-like flavor. When used too much, it can be slightly a stringent. One of the important spices in traditional Indian cooking, cardamom is found in everything from spice blends for stews to masala chai. Though typically used in Middle Eastern and Asian cooking, cardamom has found a home in many varieties of Scandinavian sweet rolls and breads.
